$125.00Our whole roasted 14-Day dry aged Buddhist duck is appreciated in three fashions.
Breasts are served with crisp lettuce wraps and an array of condiments, such as sesame aioli and ginger, Japanese mustard and pickled daikon.
The remainder of the meat is scattered over fried rice with a umeboshi kabayaki (a barbeque sauce made from pickled plums) along with pickled sansho berries and served alongside tsukemono (house pickled vegetables).
Finish with Shirumono, our Bancha bone tea. To savor the last of the nutrition, we cook the bone broth and steep with Iribancha, a deeply roasted tea with a smokey essence.
